Sheer Khurma is a rich and creamy dessert that originates from South Asian and Middle Eastern cuisine. It's made with vermicelli, milk, nuts, and dates, and is a popular Eid al-Fitr dish.

– 1 liter milk – 1/2 cup vermicelli (seviyan) – 1/4 cup ghee – 1/2 cup sugar (or to taste) – 1/2 cup chopped date – 1/2 cup chopped almond

– 1/4 cup chopped pistachio – 1/4 cup raisin – 1/2 tsp cardamom powder – 1/4 tsp saffron strand – 2-3 tbsp rose water

Instructions:

1. Heat the ghee in a large heavy-bottomed pot or pan. Add the vermicelli and fry until golden brown, stirring constantly. Remove the vermicelli from the pan and set aside. 2. In the same pot, add the milk and bring to a boil. Reduce the heat to low and simmer for 10-15 minutes, stirring occasionally, until the milk thickens slightly.

Instructions:

3.Add the sugar, chopped dates, almonds, pistachios, raisins, cardamom powder, and saffron strands to the pot. Stir well and continue to simmer for another 5-10 minutes.

4. Add the fried vermicelli to the pot and stir well. Cook for an additional 5-10 minutes, until the vermicelli is tender and the mixture has thickened to a creamy consistency.

5.If desired, add the rose water to the pot and stir well. 6. Remove from heat and let the Sheer Khurma cool for a few minutes before serving. It can be served warm or chilled, and can be garnished with additional chopped nuts or saffron strands if desired.
